How to Make Filled Potato Skins
Recipies for New Parents
New parents rarely have time to cook. Complicated recipies or dishes requiring constant attention just aren't compatible with a little one who craves attention every 10 minutes or so. This doesn't mean that you have to sacrifice home-cooked food for cuisine-a-la-microwave. There are plenty of meals that don't need close attention to prepare and cook.
Filled potato skins are just such a dish. If your baby needs changing, you can down tools and change your baby. If baby needs a feed, you can pause mid-prep to see to your child. Potato skins can be cooked at your own pace. It can even be left for another day!
Once again, this dish is very versatile, and can be eaten one handed. My favourite ways to plate this meal include:
- On their own with your own selection of toppings;
- On a bed of salad with dressing;
- As a side to a burger or hotdog.

- 4 Medium Potatoes
- 100g Grated Cheese
- 1/4 Chopped Onion
- Handful Toppings, (Pepperoni, ham, sausage, sweetcorn, bacon)

- Thoroughly wash 4 medium sized potatoes. Salt the skin (rub well into the skin to help the crisping process) and pierce each potato several times with a fork. Place the potatoes into a preheated oven at 200C for 45mins - 75mins (depending on potato size)
- Whilst potatoes are cooking, prepare your filling!
- Grate 100g of hard cheese into a bowl. Finely chop 1/4 of a red onion. Mix these two ingredients together. Then add your choice of pepperoni, ham, or tomato. You could also add sweetcorn or sausage, but these must be cooked first
- Once potatoes are cooked, remove them from the oven and cut in half using a sharp knife.
- Spoon out the potato with a teaspoon, leaving around 1 cm depth of potato around the edge. The potato can be saved for another dish, such as shepherd's pie or mashed potato.
- Fill your potato skins with a spoonful of your filling mix. (You can pause your prep at this point and save your skins for up to 24 hours)
- Place your filled potatoes onto a backing tray and then place into an oven at 200C for 5 minutes or until the cheese has melted.
- OPTIONAL: Place under a hot grill for a couple of minutes to crisp up the skins
- Top off with some sour cream and serve! This can be on their own as a snack or as part of a main meal with a simple side-salad. This dish also goes well as a side of lasagne or steak (in place of fries!)
